A sparkling made from exclusively Vinho Verde’s Louereiro and Arinto grapes, the Phaunus is bright with green apple and ripe citrus on the nose, with a brisk, crisp palate.

Lovely to drink on its own, the Phaunus will be quite nice with light seafood appetizers like tuna tartare or smoked cod dip.

One of the first varietal Chardonnay to be bottled as Crémant d'Alsace, this is a wine that would dupe any experienced taster into thinking it was Champagne. Opening with pure notes of baked bread, lemon, and a bit of wet stone, the palate is brisk and energetic, with the same mineral edge, but also a touch of caramelized richness.

A slightly weightier sparkling like the Wunsch et Mann will do well across the meal, pairing with everything from fresh-shucked oysters, to grilled clams with aioli, and tart flambée as a main.

Opening with notes of vanilla and a touch of ripe stonefruit, the palate is rich with orchard fruit, with persistent, punchy bubbles, and a crisp mineral finish.

A superb aperitif, this superior prosecco will always go well with light fried foods like croquettes or cromesquis, it will also be a lovely match for a variety of lighter proteins ranging from pan-seared fish to grilled chicken.
