2022 Villa Noria Pinot Noir
Tasting Notes
The 2022 Villa Noria Pinot Noir is a testament to the potential of Languedoc terroir, planted with cuttings from the legendary Romanée-Conti. This wine exudes a classic Pinot Noir profile with an appealing fruit bouquet on the nose, leading into a palate that reveals mineral depth and complexity of fruit. Layers of red and dark berries are enriched by a subtle earthiness, showcasing the varietal's elegance and the vineyard's unique heritage.
Food Pairing
The classical nature and depth of this Pinot Noir make it a versatile pairing choice. It's splendid with dishes that mirror its richness and complexity, such as duck breast with a red wine reduction or a cauliflower steak with plenty of herbs and a sprinkle of parmesan. For a lighter pairing, consider a beetroot and goat cheese salad that echoes the wine's balance of fruit and depth.

2022 Sylvain et Nicolas Gaillac Rouge
Tasting Notes
There's a very pleasant rustic, savory quality to the nose here that's immediately appealing, leading to a palate with dark fruit, a whiff of earth, and long, lingering tannins.

A great barbecue wine, this will be superb beside a slow-roasted pork shoulder, a classic carnitas taco, or roasted mushrooms with herbs.

2022 Retour aux Sources Héritage
Tasting Notes
Gamay Saint-Romain is one of our favorite grape varieties, for its rarity, its specificity to a certain place, and of course, for its unmistakable flavor. A rugged cousin of Beaujolais's Gamay, the grapes are usually grown on volcanic soil, as well, giving them a beautiful kiss of earth and smoke. The Héritage opens with rich dark fruit, an intimation of smoke and earth, and a serious palate with plenty of nuance to tease out.
Food Pairing
If Gamay is great with barbecue, Gamay Saint-Romain is sublime. Enjoy beside a platter of grilled pork, or for a mediterranean twist, enjoy beside kofta, sumac-spiked grilled chicken, and lamb kabob. For a perfect vegetarian pairing, look to flavorful veggies like eggplant, or a grilled wild mushrooms.
