Although Champagne may be France's home of sparkling wine, different varieties of bubbly are produced all over the country in the form of Crémant. This sparkling wine from France's emblematic red wine region is redolent subtle charm of Sémillon with a touch of pear and honey, while the palate is brisk, yet mouth-filling, with small bubbles.

Sparkling is always the best way to begin any celebration or special evening, so enjoy it all on its own as an aperitif. It will also be excellent beside early dinner appetizers like raw oysters on the half shell, tuna or vegetable tartare, or pita and labneh with lots of zaataar.

The 2022 Vegatolosa Capricho DiVino Brut Nature, a standout sparkling wine from Manchuela, is crafted entirely from Chardonnay grapes. It impresses with a rich, brioche-forward nose, that by contrast becomes a refreshing brisk palate, brimming with vibrant citrus and green apple flavors.

The DiVino pairs beautifully with a seafood risotto, where the creamy texture and rich flavors of the rice can be enhanced by the acidity of the wine. For a vegetarian option, try a fresh green apple and walnut salad with a citrus vinaigrette. Alternatively, a selection of creamy artisanal cheeses like Brie or Camembert, would be lovely.

A shining example of Champegnoise-winemaking outside of Champagne, the Burckel Jung rosé opens with classic notes of light pink fruits, and a touch of caramel, while the palate is snappy, fresh, and altogether lovely with lively, persistent bubbles.

Sparkling rosé is a pink and pretty way to start any gathering, though this wine has enough personality to be enjoyed beside seafood appetizers ranging from rich quennelles or vibrant and fresh salmon tartare.

A classic example of sparkling rosé, marrying the bready, more savory flavors of a white sparkling with just a touch more ripe fruit. This bottle opens with light intimations of strawberries and cream, while the first sip is full of pink fruit, and a lovely mousse of mouth-filling bubbles.

Sparkling rosé plays much the same way that a white sparkling would, although it can accompany some richer dishes too. This wine is going to be excellent beside a parade of salty Spanish pintxas, heftier fish like salmon or sole, and roasted vegetables.
