Our Spanish Sparklings

The Filo del Espejo, or "Mirror's Edge," is a terroir-driven Cava of the highest order, incorporating the extremely rare Malvasia de Sitges into the typical regional sparkling blend. Opening with pure citrus, caramelized golden apple, and just a bit of pine needle, the palate is crisp and straightforward, though not without complexity, with the same clear fruits, and an uncommon depth for Spanish sparkling.

There's no better aperitif than a bright bottle of sparkling, and the Filo del Espejo will be a majestic way to open any meal. It will also pair equally well with subtle seafood preparations like salmon tartare, or oysters on the half shell, or more substantial fare like classic fried chicken.

A superb rosé Cava that reflects its Champagne-inspiration very well. Opening with notes of raspberries, lemon oil, and chalky minerals, the palate is extraordinarily bright and refreshing, with the same light pink fruits, and a lovely back end note of biscuit dough.

An ideal aperitif, the Rosato cava will be excellent beside fattier fare like raw oysters on the half shell, karaage with aioli, or even something a bit more substantial like a bouillabaise.

A champegnoise Cava par excellence, the Eco e Narcisso opens with distinct notes of cooked brioche dough, sweet, ripe citrus, and a whisp of caramelized apple, on the palate, it has the same notes, along with large, yet elegant bubbles, and a tantalizing, fresh finish.

A fabulous wine to start any soirée, the Eco e Narcisso will match well with both raw and cooked oysters, à la Kilpatrick or Rockefeller, a classic comté soufflé, or a classic caviar and blini setup.
